
Orange Cookies
Published Monday November 17th, 2008


1 cup shortening
½ cup sugar
1 cup buttermilk
3 eggs
2/3 cups orange juice
4 ½ teaspoons grated orange peel
3-3 ½ cups flour
1 teaspoon baking soda
1 teaspoon baking powder
Icing:
4 ¼ cups icing sugar
¼ teaspoon orange extract
1/3-1/2 cup orange juice
In a mixing bowl, cream shortening and sugar. Add the buttermilk, eggs, orange juice and orange peel. Combine dry ingredients, add creamed mixture. Drop by teaspoon 2 inches apart on greased cookie sheet. Bake for 10 minutes at 350 degrees. Remove and cool on wire racks.
Icing: Combine icing sugar, orange extract and enough orange juice to achieve desired consistency. Spread over cooled cookies. Makes 12 dozen.
